Made chicken parmesan last night and between still not having quite grokked our stovetop and being unfamiliar with how much
myrialux's spiffy big pan retains heat, managed to burn the third and fourth chicken breasts. So we ate those and saved the non-burnt ones for today. (The breading was burnt, but the chicken inside was cooked perfectly.) Also roasted tomatoes from a recipe that had way way way too much oil and salt in it (will try again, with a fraction of those ingredients), and made brown rice.
And at the last moment decided we needed a sauce with it all, so looked up beurre blanc, realized the only proper ingredient listed that we had was butter, and made my own: scraped up most of the burnt bits form the pan, put in the rest of the chicken stock and squeezed a Meyer lemon into it* and added a shot of citrus vodka for the alcohol**. Then tasted it and remembered the lack of acidity for the lemon and put a couple of capfuls of apple cider vinegar into it. Reduced it for a bit, threw in half a stick of butter***, and then realized I hadn't reduced it *enough* and put in some cornstarch to thicken in. Result: not half bad. It certainly perked up the brown rice and worked on the chicken. I wouldn't survive Top Chef or Chopped, but it was edible.
And had interesting dreams last night. I dreamed that
myrialux was talking in his sleep****. I figure out it was a dream when I started laughing really hard and he didn't wake up. The only thing I remember him saying in the dream was "I can smuggle the cello."
The other dream was sort of a movie trailer, about four modern-day teenagers who were destined to become superheroes*****, only the announcer said "What if they were thrown into jail for a parking ticket in 1977?" There was time travel involved, obviously -- they somehow went back to 1977 and were stuck there in jail, in danger of missing whatever it was in the modern day they were supposed to do.
* Cross between an orange and a lemon - smells like an orange, is tart like a lemon, does not have the acidity of a lemon.
** Home-infused. Mom gave
myrialux a vodka-infusing kit for Christmas, and he tried it with blood orange, etrogg citrus, and turbinado sugar. It's interesting - a bit too tart to sip, but I'd like to try it in a vodka tonic.
