Taste-tripping.

Someone brought those to our camp last year at Flipside -- the berry itself, not the modified form -- and it's VERY TRIPPY!

It seems that it covers your tongue with a compound that breaks down into sugars when exposed to .. stuff. I did some research after but have forgotten most of it.

The long and short of it is that things taste sweet that have no business being sweet (and you are actually tasting sugars, it's not an illusion) -- like olives, dill pickles, dark beer, lemons, and so on.

Too sweet, actually; it gets kind of icky after a while. But fascinating!

I don't think it breaks anything down into sugar. It turns many sour and bitter things into sweet-tasting. I am also very interested in trying out.

I think the main thing to be careful of is that sour and spicy things are still sour spicy. So, for example, drinking too much pickle sauce or Tabasco is still going to burn your throat.

And possibly your other end.

It doesn't change the other food, it ITSELF changes; it is a super long molecule that splits into sugars with contact with the other stuff.

And, since this super wacky long molecule is coating your taste buds, that's what you taste preferentially over the other stuff.

I saw a CNN article on this stuff. As I understand it, it has a competitive enzyme. Acids push this sweet, sugar-like molecule into taste receptors. Makes limes taste like candy and spicy barbecue sauce or Tabasco like burning hot honey.

Yeah. Definitely want to try this stuff.

Ex tried it, and says that it was EXTREMELY awesome. 'Cept pickles still tasted like pickles, and anything with cheese was unaffected. But cheap beer & V8 juice were heavenly.

The AV Club did a review a bit ago and said the tough part is remembering that what's no longer hot going in may burn quite a bit still going out.
