So what would be a good side dish to serve with pork adobo?* Besides the rice, I mean.
* The Filipino version, with soy sauce and vinegar, not the Mexican version with chiles.

Fresh cucumber pickles: just a little salt, seasoned rice vinegar, a pinch of sugar.
Quick stir-fried vegetable (spinach, finely sliced zukes, fresh green beans) made with garlic and ginger, a little soy, and a pinch of sugar.

Just zucchini, or all squash? Because you can do the same thing to yellow squash that you can to zucchini.

All squash, unfortunately, unless it's been changed to a form and taste that is almost entirely unlike squash. I've had a squash cream soup I liked, and I loooove pumpkin pie, but that's about it. :)

This is probably too late, but I'd say atchara? It's basically pickled unripe papaya, red peppers, carrots, onions & ginger.
Or a salad full of leafy greens.
