I made that once, but it was with chocolate sheets as nori, rice pudding as rice, and various cookie-cake-y things as filling. Less colorful, but the texture's closer to the original, imo.
Of course, I am all for dessert sushi of all kinds. :)
Very cute! (See also these - a very nice person sent me some last fall .... mostly sculpted from colored/flavored white chocolate and such ... marzipan would be another possibility.)
