Here's that mushroom recipe I mentioned. It's from Madhur Jaffrey's Far Eastern Cookery.
Spiced Mushrooms in a Packet
1 large garlic clove, chopped fine
2 tbsp lime or lemon juice
1-2 fresh hot green or red chilies, chopped finely
1/2 tsp shrimp or anchovy paste
1/2 cup very finely grated fresh coconut
or 5 tbsp dried unsweetened coconut (soaked in 4 tbsp boiling
water for 30 min)
1/8 tsp cayenne pepper
3/4 tsp salt
1/2 lb fresh mushrooms, sliced in 1/4 in thick slices
Mix everything (except mushrooms) together. Toss mushrooms in
mixture. Put mushroom mixture on large piece of aluminum foil and
fold to make a packet. Bake in a 350 degree oven for 30 minutes.
What *I* do is use coconut milk instead of the coconut - the first time I made the recipe, we didn't have grated coconut, so I threw in 1/2 cup coconut milk and it worked great. I made it again with shredded coconut - not so good.
You can get shrimp paste at Asian stores, and I think you can get tubes of anchovy paste in grocery stores.
I usually substitute jalapenos for the chiles.
And now I am craving this.
