No harm done; the cheese on top was far beyond melty and well into cheese crisp territory, and a bit of browning on the top of various ingredients. And overall, it was quite tasty. I usually don't much like bell peppers, even though I like the flavor they lend to dishes, so I usually eat everything but them, however I discovered when I was done that I'd eaten the entire pepper.
I used this recipe for "Mexi Stuffed Peppers" (really, Tex-Mex if you're pedantic abut it) to make six, baked two, and froze four.
It starts by making taco filling with beef and your favorite taco seasoning (Old El Paso here; it's what I grew up on). While I normally add a can of diced tomatoes to taco filling (and use the liquid in the can in place of the water it calls for) because it adds a lovely deep flavor, this time I just used 2 Tb of tomato paste we had in the freezer along with the water it called for. And added cilantro, because we had some.
For future versions, I'd swap the proportions of black beans and corn--it's 1 C corn to 1/2 C black beans, and I'd like it better with less corn and more beans)--or even add the full can of beans. If I did the latter, there might be enough left over after stuffing 6 peppers for 2 people to have with lettuce, taco chips, and other taco salad-y ingredients. Especially if I added a can of tomatoes as usual.

So far I just put them in a foil-lined cake pan, covered it with press-and-seal plastic, and stuck them in the freezer. At 6, I've got a reminder to take them out, at which point I'll probably wrap them each in foil and then put them in freezer bags.
At which point we'll immediately forget they exist, and we'll throw them out next year after we unearth them from the depths of the freezer. If we don't, you're supposed to remember they exist 24 hours before you want to eat them, let them thaw in the fridge, and then bake for 30 minutes at 400°F. We may experiment with low-wattage defrosting in the microwave to see if that works.
