Mmmm, lunch. Yummy lunch.

The chicken and pale beans are from a recipe for roasted chicken thighs with white beans and tomatoes. The book suggested that leftover chicken could be eaten in a sandwich, the bread spread with hummus that had been spiked with cumin, oregano, and sesame seeds. The red beans are from a recipe in a Japanese bento book where you make a freezable bean salad with kidney beans, onion, lemon juice, olive oil, and parsley (we substituted dill). Three grapes are stuffed next to the hummus to keep the container in place during transport.
Verdict: Mmmm, lunch. Yummy lunch.
Toby took much the same thing yesterday for lunch, with a small thing of goat cheese instead of the red bean salad, and I have pretty much the same response as him to the sandwich: the hummus totally made it.

Re: beans--nope! It's got a freezer shelf life of 1-2 weeks, according to the book, so I expect they'l get mushy at that point, but we made this on Sunday and the beans are still fine.
