Foooood

So...if we grill Russian Onion and Pork Kebabs thus weekend, what would work for sides? The kebab recipe involves marinating the pork overnight with ground coriander, salt, pepper, and a metric fuckton of onion, and is served with Russian-style black bread and a sort of ketchup made with tomato sauce, lemon juice, and a couple of other things.

Vegetables needed in this dish!

The way I see it served is bits of meat on the kebab are interspersed with slices of tomato and onion and then cooked.

There's about as many different ways of doing kebabs as there are people who cook kebabs, and lots of different cuisine's styles. Some cook vegetables and meat on the same skewers, some don't. This recipe doesn't.

Spiced fresh cucumber slices, a la sushi appetizer, sounds like a good balance - light, water-heavy, spice-dependent, cool and crisp and palate-cleansing :)

I second the cucumber suggestion- but maybe as a quick pickle with celery seed and a bit of sugar and dill. I'd add sweet & sour red cabbage with apples or, if you don't feel like cooking indoors, a vinegary cabbage slaw. Or you could make a potato salad with celery, red bell pepper, green onion and a mustard vinaigrette!

Cucumber salads, as mentioned, are traditional. Our family's usually involved sour cream (yogurt could be substituted) and chopped fresh dill.

Or, you know,keep it really simple and serve the kabobs over a bunch of rocket and super thin slices of sweet pepper. Toss a foil packet on the fading grill while you are eating : sliced apples or peaches, knob of butter, pinch of brown sugar.

All the onion makes me think a simple parsley salad would be a good side! It's delicious and freshens your breath,too!
There are all sorts of recipes out there for it. Mine is just chopped parsley with diced oinoin, tomato, cucumber, and dressed with olive oil and lemon.
