I'mma go with the honey badger for the first one; wolverines are nasty but honey badgers are too mean to die, so they'd ultimately win by attrition.
As far as #2 goes, I now have an image of Wolverine walking into the Mansion infirmary and going "It followed me home. I like its style. Can I keep it?" while Beast has the job of getting the pry bar so he can open the ratel's jaws enough to get it to let go of Wolverine's leg or something like that.
