I just have to figure out how the heck to paint that realistically - I know she gets the skin texture by painting it first and then going over the skin with a small, thin brush picking up slightly lighter and darker colors, in short strokes, but I can't even get there yet...

I think she textures the same way I do. I just don't texture well enough to ever use it on skin...
