Just to make you all hungry...
...my lunch for today consists of:
Box 1:
Rice
Black Beans (simmered with soy sauce and sugar - mmm good)
Box 2:
Chicken Dumplings
Sweet Simmered Shiitake
Salted Cucumber
Grape tomatoes
All from Sunday's mad cooking spree, packed in two small square bento boxes.
I am already hungry and it's only 9:20. Luckily I have another slice of bread to toast to hold me until lunch.

The measurements are a bit odd, since the original recipe calls for beans as if you're cooking them from scratch. So for every 3 cups of cooked beans (1 cup dry if you start from scratch), you want 1 cup sugar and one Tb soy sauce. The can I had - 15 ounces - was really almost 2 cups, so I cut the measurements on the sugar and soy sauce by a third.
