(Ah, so the leathery seaweed is called kombu in Japanese! That's handy to know. Koreans make stock from it, too.)

I used it and bonito flakes to make a good bit of dashi ... and then discovered that I'd managed to pick a bunch of recipes that didn't use it. XD So I froze it in ice cube trays, for later use.
