Egg recipes?

I had to hard-boil a bunch of eggs, because they were getting quite elderly. And now I have a bunch of hard-boiled eggs, which I am so not going to eat all of before they go bad.

Anyone have any recipes that involve hard-boiled eggs that aren't deviled eggs or egg salad (since I have two recipes of my own for those that I like)?

I didn't have any, so I tried epicurious, which was also deeply disappointing.

But I did find Picnic meatloaf, (http://www.epicurious.com/recipes/food/views/PICNIC-MEAT-LOAF-238876) which looked interesting, though I'm not a big meatloaf fan.

Scotch eggs, (http://www.epicurious.com/recipes/food/views/SCOTCH-EGGS-WITH-FRESH-HERBS-109489) which look deeply unhealthy and also awesome.

Scotch Eggs are indeed quite awesome, and a wonderfully unhealthy addition to a nice little salad.

Scotch eggs are a bit labor-intensive, but they are indeed tasty and awesome for those days when you just want to ignore little things like "calories" and "cholesterol levels" and BEAT THOSE ARTERIES INTO WHIMPERING, PLAQUE-CLOGGED SUBMISSION. Mmmmmmmmm. Serve with gravy for EXTRA AWESOME. Serve with a side of deep-fried macaroni and cheese (http://www.foodnetwork.com/recipes/paula-deen/deep-fried-mac-and-cheese-recipe/index.html) on those days when you really, really want to give the finger to healthy eating; you may want to have a defibrillator handy, of course.

I like to use them (sliced) in spinach salads, along with bacon bits, mushrooms, and a red wine vinaigrette dressing.

Yes indeed. Family recipe called Ham Carolina.

Make up a pan of cornbread.

Take hard-boiled eggs and cut them up - those egg-slicer things are handy, I generally cut one way and then a second way to get little strips. I think we'd use like six eggs. Mix up with diced ham - oh, maybe about a pound of it? And a can of cream of mushroom soup. Heat the mix.

Slice up cornbread, we used to do like a quarter of the pan if a square pan, then split it in half. I'd usually pour the egg-ham-soup mix over one of the halves, and butter the other half. Eat. Mmmm. Lovely comfort food to me.

I recently saw an interesting recipe for chocolate chip cookies that involved a hard-boiled egg as well as a raw one. I think the idea is to get a less wet dough that won't spread out as much, so the cookies come out thick and chewy. I am definitely going to try that myself at some point.

I sometimes like egg curry (http://www.indianfoodforever.com/non-veg/eggs/egg-curry.html). I haven't tried that particular recipe that I linked to, but the general theme of eggs in curry-spiced tomato sauce usually works out well, whatever the particulars.

Pea salad - cooked peas, finely-chopped onion, chopped hard-boiled eggs, and a little mayo to bind it all together. Season to taste (I like using a little rice wine vinegar to give it a little kick, plus salt, pepper & a little mustard) and you're good to go.
