If he's OK with a sort of jammy texture, this works out well! It absolutely needs croutons (homemade or storebought) for crunch, and the addition of the leftover smoked sausage really helped it for me, because just the veg and egg would be all the same texture. The egg isn't 100% necessary, really, but the yolk adds a little of its sauce to the dish, like it does in ramen.
The main problem is that while it's not a difficult recipe, mostly being chopping it all and dumping it in a pot at two different times, it does require the attention of stirring every 10 minutes or so to not stick to the bottom of the pot.
It cooks down really far--putting all the stuff in at first, I thought it would be 4 substantial servings, but nope, 2 substantial or 4 small. I don't know how the author thinks 1/4 of that plus one egg and some croutons is a meal.
