You know, Ciao Bella did this monte bianco gelato flavor last Xmas (based on the Italian dessert). The supermarket still carries it.
I could SO see that as an ice cream sandwich with these cookies. *nom nom nom*

Mmmmm.

The cookies aren't quite as sweet as I'd like, but I have a massive sweet tooth. :D Other people find them great, since they're not that sweet. The not-that-sweet works well with sweet ice cream, though!
