ANOTHER snow day today!

Also, I had an urge to make cinnamon rolls, but the problem is that all recipes I can find make approximately one billion rolls, and not only are there just two of us, but we're both watching what we eat and having a bunch of cinnamon rolls hanging around is not s good idea. I don't want to freeze any, as we are rapidly running out of freezer space.

I dug out my old standby for small amounts of sweet treats, Small Batch Baking, but it calls for boxed 'hot roll mix', which we don't have any of, nor any idea what's in it, so can't even fake it.

Aaaaargh!

Is a dozen too many (or, a theoretical dozen: 2C flour)? I can send you a recipe from the Boston Globe which is not the usual giant family batch.

Omg! I need that book! Why do so many recipe authors still assume you're feeding all the farmhands in from a long day of rustling the cows or whatever it is they do?

I snapped it up the moment I saw it! The recipes make 2-4 servings each, and THAT'S ALL! You bake cakes in tin cans, and may have to purchase some cute small bakeware for some of the others, but it's wonderful to have a craving for, say, muffins and be able to make TWO.

Recipe for Hot Roll Mix

... it claims to make 22 cups of mix, though. It uses flour, sugar, salt, and nonfat dry milk.

(A couple of online answers sites claim that 1 lb of flour = about 3.5 - 4.0 cups, so you could scale from that viewpoint. Check out the notes at the top of the recipe, which talk about how much yeast to add vs. how many cups of the mix you are using.)

An episode of Good Eats all about cinnamon rolls and a few other things. The recipe he uses for cinnamon rolls makes 1 dozen rolls.

As long as you keep the proportions equivalent, you can scale down any baking recipe just using long division and it will still work, though you may need to buy some liquid egg to deal with the fractions-of-an-egg issue.

Hmmm. Depending on how many eggs are involved, she could just beat up an egg, measure the result with some measuring spoons, and feed any leftovers she didn't need in the recipe to the cats.
